Tonight I made my signature meal…the easiest one ever: Chicken and Rice

I started with a big pot and put chopped onion, green, red, and yellow pepper, olive oil, and tomatoes all mixed together.

I used Chicken Tenderloin from Costco. First of all, I LOVE Costco. It is ADDICTING!!! I have a big family though and whenever I cook I have to cook for 6 so the big packages are great for us. But what I love about this chicken tenderloin bag is each piece of chicken is frozen individually before placed inside the bag. This makes defrosting them so much quicker and easier. I hate buying meat at the grocery store and having to take it out from the freezer at least 4-5 hours prior to cooking it. Most of the time I don’t even know what I want to cook until it’s time to cook! So it’s a pain. But this one, makes it sooo easy. So I highly recommend it. They don’t just have chicken tenderloin in this kind of packaging either, so check them out.

I added one large cup of water (equivalent to 2 cups if you use a measuring cup) and then added 8 pieces of chicken. I stirred it all up, added some sea salt, put the lid on the pot and let it cook on medium-high.

Egreis Gjergjani CookThe big question…how long do you let it cook? It depends. I don’t have an exact time I go by. I just check it often, stir it and when I see that the chicken has cooked thoroughly (you can tell when it’s falling apart into small pieces) I turn the heat off. Today it took about 30 minutes for it to cook.

In another pot, I poured two bags of Creamy Chicken Rice Mix and 7 cups of water. They have the instructions on the bag and super easy to follow. Now, I know a lot of people are against the whole using already prepared type of food. And if you are one of them, great for you! Honestly! Good job that you can make everything from scratch and that you do so on the daily. I don’t. And guess what? It’s A OKAY!  It doesn’t make you any better, nor does it make me any worse. So please spare me the judgmental comments you “all from scratch” people love to make.

Egreis Gjergjani CookI am perfectly content with cooking whatever is easiest and takes the least amount of time to prepare. The food tastes just as delicious, I promise. I’m a stay at home mom and can barely find time to do much during the day. Now at night, it’s a whole different game. Gio passes out at 8-8.30 pm so from then on I’m free to do whatever I please. But prior to that, I’m pretty much tied up all day. I can ONLY imagine what working moms do when it comes to this. It must be extremely hard so I mean this with all my heart when I say BRAVO to you! And don’t you dare feel badly for using soup from a can or mixed rice from a bag. Do whatever you can and that is good enough! I swear I thought young adults were the ones that can be so mean spirited and evil to one another, but it wasn’t until I became a mother that I realized moms (especially the older ones) can be some cruel a** bishes. I don’t even get it. But I’ll save that for another post. Back to my delicious meal….NOM NOM!

Egreis Gjergjani CookThis next step is up to you to follow or not. I like to add vegetables to whatever meal I make, and I usually like to cook them mixed with the meat. Sometimes I prepare it separately but most of the time I like mixing the juice from the meat with the vegetables. It adds an extra flavor to it. Tonight I chose two bags of “Mediterranean Blend” veggie bags I purchased at the local grocery store. It has potatoes, zucchinis, tomatoes, etc. Again, if you prefer buying those vegetables separately and mixing them, that’s great too. I normally buy all vegetables on top of these veggie bags, but I use the other ones for when I prepare Gio’s meals. I’m a bit more health conscious with him but that’s because he’s a little baby and has a more sensitive stomach than we do. At least that’s what I like to think.

Egreis Gjergjani CookSo I cut two of these bags open and added them to the chicken pot. Let it cook for another 15 minutes or so. In the end I served a bowl of rice, chicken and veggies mixed all together. I’m a stew kind of girl so most of the time I like to mix all of the food I cook. But feel free to serve it separately if you’d like. But i have to say the juice from the chicken pot tastes delicious over the rice 🙂

When it comes to my son, Gio, I usually serve him whatever the rest of the family eats for dinner. I just use the baby bullet to blend it all together. So this is what he had for dinner tonight and boy did he love it! Here’s a little trick from one mommy to another: make enough dinner that you can save some for lunch the next day for you and your little one. This way you only have to make 2 meals a day (breakfast and dinner) instead of 3 🙂
